Fall has arrived! And nothing says autumn like the warm, inviting scent of banana bread fresh from the oven.
This banana bread loaf is one of my favourite things to bake for my partner ‚ its soft, tender, and subtly sweet, with just a hint of vanilla to complement the flavour of ripe bananas.
Perfect for chilly mornings, lazy weekends, or a mid-afternoon snack with a mug of spiced tea or coffee!
Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Mash the bananas in a large mixing bowl until smooth. Stir in the melted butter.
- Mix in the sugar, egg, and vanilla extract until well combined.
- Add the baking soda and salt, mixing thoroughly.
- Gradually fold in the flour until just combined—don’t overmix.
- Pour the batter into your prepared pan and smooth the top.
- Bake for 50–60 minutes, until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- Serve warm with a pat of butter, or simply slice and savor with a cup of chai tea (my personal fav!) or coffee. Happy baking!
