Summer food should feel easy. Now that it’s warmer out, I’m focused on minimal cooking, fresh ingredients, and something you can throw together without overthinking it. These toasts are one of my favourite things to make when tomatoes are in season, and peaches are perfectly ripe. They feel a little elevated, but take almost no effort.
Perfect for lunch, hosting, or one of those dinners where it’s too hot to actually cook!
Ingredients
Serves 2–4
- Sourdough or crusty bread
- 1 ball burrata
- 1–2 ripe peaches, sliced
- Cherry tomatoes, halved
- Olive oil
- Hot honey or regular honey
- Fresh basil
- Flaky sea salt
- Black pepper
Optional: prosciutto or toasted pistachios
Instructions
Toast your bread until golden and crisp. Spread pieces of burrata onto each slice while the bread is still slightly warm.
Top with peaches and tomatoes, then drizzle with olive oil and a little honey. Add fresh basil, flaky sea salt, and black pepper.
If you want to make them feel a bit more substantial, add prosciutto or some crushed pistachios on top.
Serve immediately with a cold glass of wine or sparkling water and enjoy slowly outside if possible. Honestly, this is summer to me!
